Avize is one of the famed villages on the Cote des Blancs. Literally translated Cote des Blancs means the side of the whites derived from the fact that the Chardonnay is clear skinned and gives clear juice when crushed, hence the white of the whites. The Cote is a famous stretch of land which starts just below Epernay and goes down towards Cuis, Cramant, Avize, Oger, Le Mesnil-Sur-Oger and Vertus. This area of Champagne is famous for its Krug and Dom Perignon brands. It is said that the further south you go, the better the grapes, arriving at Le Mesnil which is perhaps one of the most famous vineyards in the world. This Blanc de Blancs has a Dosage of 9g/liter and is aged for 3 years before marketing.The attack on the palate is supple and fresh, with a creamy effervescence. The wine grows in the palate with a light density of fleshy white fruits of pear and apple, with a sensation of lime pulp. The straight and taut structure is animated by a lemony acidity, well balanced by a stony minerality of very pure chalk. This mid-palate rises towards a concentrated, peppery, vertical and fresh finish, enhanced by aromas of fresh herbs, dill, clothing mixed with a creamy mineral sensation.
