Both in terms of vines and wines, the approach is to be respectful of the environment, and fastidious with regard to the quality and typicity of the wines. Domaine des Malandes wines are appreciated for their freshness, their finesse and their minerality directly from the famous Kimmeridgian, a unique subsoil of the Chablis vineyard.
The Mont De Milieu sits just under the Grand Crus in Chablis thus provoking a more powerful wine compared to the left bank wines where most of the premier cru wines hail from. So we have two types of premier cru, the more powerful and softer style, almost bordering on a Meursault, or the more minerality side of something like a Pouilly Fuisse. This Mont de Milieu is more on the Meursault-St Aubin side. Some oak barreling towards the end of the elevage is key to these sensations, a powerful, rich and elegant personality that develops in the middle and the finish. Please make sure to serve between 46-48F and in the best glasses.
